ganache taste bitter

my ganache tastes very bitter ive used 2lb of 74% dark chocolate to 1 pint of cream is their any way i can add something to lighten the taste its for a little boys cake and want him to enjoy it thanks

I use 50% chocolate and sometimes do half milk half dark chocolate and it’s much nicer

You could half your existing ganache and add milk chocolate ganache to it. You may need to use a little extra good quality milk chocolate to take the bitterness off. I’ve had to do this in the past and it tasted fine.

Once you start getting above 43% cocoa solids the more bitter the chocolate because it is less adulterated. I usually find that the ganache, when eaten in combination with fondant evens out the sweetness of the sugar and the bitterness of the chocolate. Really you only need up to 50% cocoa solids to make a ganache to cover a cake anything after that will set VERY firm and taste bitter.

You can add 1/2 cup of confectioner’s sugar to the ganache. Also, try using 1:1 ratio of  Semi sweet chocolate and Milk Chocolate. It works fine.

This is a recipe for ganache made with butter
1lb. Chocolate (50 cocoa solids is Di

9oz unsalted butter
1tbs golden syrup
Melt chocolate – mix with butter and syrup – heat of chocolate will melt butter then blend together
This makes sweeter ganache. It keeps well too

add a pinch of salt to it – saw this tip on one of  heston blumenthal’s programs, was a bit reluctant to try it but it really takes the bitterness away
