Vanilla Sponge Cake

I have watched Mrs Jones make the two Sponge cakes and I have also watched Paul Buttercream a
Chocolate Cake which was very usefull to me, I would like to know when butter creaming a Vanilla Sponge does Paul use two Vanilla sponge Cakes layered or One whole Cake Vanilla Cake ( as the Chocolate Cake demo ) if it is one whole vanilla Sponge is it the same recipe as mrs Jones uses but cooked in one tin — little bit confused about this – Thanks

I cut all my cakes, including Victoria sponge into three. I find my sponge cakes come out about 3″ in height so perfect size for layering. I think most people tend to make Victoria sandwich in the shallower tins because they are a quick tea time treat, but as you can see from Mrs Jones’ tutorial a Victoria sponge can also be used to make a much more elegant cake for a special celebration. I always chill my cakes well before layering, this allows for a better cut and less crumbs when filling and covering the cake. x

Hi Pearl

All the cakes Paul uses in the tutorials are cut in half before filling. Mrs Jones was demonstrating how to achieve a tall sponge with her two sponge cakes without having to layer them. I don’t think I have seen Paul use vanilla cake in any of his tutorials. I always cut my cakes in three to achieve height and also because I prefer thinner layers. Hope this helps. x

Thankyou for your reply , may I also ask are you talking of a victoria sponge mix cut into three or a madeira cake mix cut into three Thankyou so much
