Steeping fruit
How long can I leave my fruit steeping in brandy before I use it? There appears to be something wrong with my oven and I need to get it repaired before I risk baking my cake

You can keep it going for as long as you want, I soak mine for three days sometimes longer. Just make sure it is completely covered up, preferably in an airtight container. It can be stored in the fridge if you want, give it a stir every couple of days to make sure the fruit gets an even soaking and add more brandy if it looks a bit dry. If there is too much brandy left in the container when you come to baking the cake drain some of it off before adding the fruit to the batter. This is just a precaution so not to add too much liquid which might make the cake soggy. Your fruit will be beautifully plump and the cake will be delish!
i only have one tin…..can i make up the fruit cake mix for 2 cakes and cook the other cake afterwards. If yes…how long will the uncooked batter keep?
