By looking at the tutorial these are the approximate ingredients I would get. For the three cake 10″ = 1.5g,
8″ = 900g, 6″ = 500g white sugar paste. For the strips I would allow 150g each colour which would leave some for the flowers and bow. There should be sufficient white from trimmings left to cover the board. Ganache 10″ = 600g chcoc, 8″ =400g, 6″ =300g. The cream will depend which ratio you will use, if you need help with that have a look at the free/beginners tutorial on how to make ganache. Your decorating shop will be able to help you with the amount of ribbon you’ll need for the size board. Please post again if you need more help. x
