Hi Bren, normally when I make models, I use around half and half. This normally produces nice firm models. But if you do no want them too firm then just add a little at a time till you feel its right for what you want to make. As you mix the two together you will feel the difference. If you want to make gum paste from straight fondant you add 1 teaspoon of tylose powder or CMC or gum tragacanth. Knead it in very well until you can feel the fondant getting stiffer. If you use gum tragacanth leave your paste to rest wrapped in plastic bag for at least 12 – 24 hours before using. Gumpaste made with tylose or CMC can be used straight away or rested for 20 minutes. You will be able to judge whether you need to add more powder if your paste doesn’t feel strong enough. Add small amounts of the strengthener until you’re happy with the consistency. If the paste becomes too hard it can be softened by kneading in a little trex or any white vegetable fat. Once your paste is made keep it tightly covered in cling film and a plastic bag so it doesn’t go hard and spoil.
