Buttercream Wedding Cake

Hi
Looking for some advice i am making a 3 tier chocolate wedding cake which is to be covered in buttercream and transported in a car for 5 hours! Can this be done in hot weather i am scared it will melt! And i did a course with paul who provided me with a ratio for buttercream e.g 500g icing sugar to 250g butter.

Any advice would be great

Well I guess it can be done providing you can crank up the air conditioning in your transport. I would have the cakes really cold before boxing them up, run the air con for a good 15 – 20 minutes, windows shut to get maximum cold and then run it on full blast all the way. You could also pack dry ice in the box. Here http://www.foodservicewarehouse.com/education/10-tips-for-transporting-a-wedding-cake/c27521.aspx are some tips on transport tiered cakes in hot weather. Dry ice can be bought online, this is just one company http://www.green-gases.com/dryice.htm, but there are many more which you can see by googling ‘dry ice suppliers’. If you’ve never used dry ice before you need to be aware that heavy duty gloves should be worn before handling as it will cause severe burns if it comes into contact with skin. The suppliers will be able to give full handling instructions. Sorry I can’t be of more help, perhaps other members will be able to say how they cope with this dilemma. Good luck hope all goes well. Oh and don’t forget to wear a jersey in the car for the air con, you’ll freeze otherwise! x
