Hi all,
I’m doing a wedding cake all with renshaw chocolate sugarpaste,
Is it best to roll out in coco powder or icing sugar? As it being dark will it show if I use icing sugar?

Hi Ryan

I use coco powder sparingly. It can make a heck of a mess, best to use it through a dredger. I’ve not covered large cakes with the chocolate paste as I find it too soft and stretchy, just go carefully with it.
