Tiered sponge cake
Hi,
Could anyone tell me if it would be okay to use something like jam and buttercream as the filling in a 3 tiered sponge cake? I’d use white chocolate ganache to cover before icing afterwards,but just a bit scared its all going to collapse on me!

Hi Kirsty, I have put jam and buttercream in sponge cakes. I piped a dam around the edge of each tier let that set then add rest of filling. chill and let it set before ganaching. If I’m using ganache (now that I’ve mastered it) I use that in the filling Marian
