Parkin recipe
Hi
Does anyone know of a good recipe for Parkin?
I’ve been asked to make some and I’ve never made it before.
Thank you
Rachael

Hi
I have not made this myself but just noticed the recipe in a book I was looking thru last night:-
Parkin
125 g/4 oz butter
175 g / 6oz black treacle
150 ml / 1/4 pint milk
175 g / 6 oz SR flour
175 g / 6 oz medium oatmeal
125 g/4 oz muscovado sugar
2 level teaspoons ground ginger
1 medium egg beaten
Set oven to gas mark 3 or 160 C, Line a 7 in square cake tin with baking parchment
Melt butter, treacle an milk and heat until the butter has melted
Add the dry ingredients and beat in the egg.
Bake in the oven for 1 hour, then leave in the tin for 15 – 20 minutes then transfer to a wire rack
When cold wrap in clean baking parchment and then foil and keep for 3 – 4 days before eating
Thank you, I’ll get baking tomorrow!
