Hello caroleLahoud

I’ve baked sponge cakes and substituted the butter for oil. the end result was slightly different, the cake was more dense and had closer texture. Mrs Jones’ sponge cake uses some corn flour so I wouldn’t like to say how that would affect the cake.

Correction to my last answer, Mrs Jones’ cupcakes uses cornflour, not the deep sponge recipe. I hope you find the above link useful.
