Hello All,

I am making a teapot cake for my nans birthday on the 28th, I was intending to do a madeira cake with jam and buttercream but since I used ganache I don’t like using buttercream, will white chocolate ganache go with jam and madeira cake( or similar sponge)
would it work by having buttercream on the inside of the cake with the jam and a layer of white choc ganache on the outside to help keep it firm?? Arrgh so confused!! lol

i have used white ganache with madeira and jam, seems to go fine.

If you want the jam on the outside I think it would have to be a fairly thin coating for the ganache to set on.
The combo is fine, they go well together, it’s just a possibility the jam may seep through the white ganache. Try it out on a small shop bought cake first to make sure. It would be a shame to spoil your nana’s cake if it doesn’t set properly. x

so should I put butter cream on the inside and just ganache the outside or ganache inside and out, thanks you both!!

Hi Stephanie,
I have used buttercream with jam as the filling and then white chocolate ganache on the outside.
It goes lovely together, I personally would not put white ganache on the inside as it can be quite sickly.

I agree with Jackie, better to have the buttercream and jam combo inside and ganache on the outside.
