Fruit cake as top teir

Hi, I have been asked to make a 4 tier wedding cake, with the top tier being fruit cake and the bottom tries being sponge cake. Is it ok to put a fruit cake on the top as long as it is well dowelled? Thanks

Hi Karen

Yes it’s fine to do that as long as you have a good solid support structure. Just follow Paul’s dowelling method.

I’ve done several wedding cakes with the top tier being fruit, the largest of which was five tier. As long as the cakes are marzipanned and iced onto a cake drum which is the same size as the cake and plenty of dowels, it works perfectly. Good luck
