Hi can anyone give me quantities for a 12 inch x3 square Victoria sponge .I am also looking for ideas how to make the open lid have thought re foam or should I use cake if so should I use same cake tin and reduce quantities

If you have a recipe you already use, the ingredients can be scaled up by either using the ready reckoner or the cakeometre.
I’d recommend you bake in two halves rather than one deep cake as some recipes for victoria sponge can collapse. One bowl recipes tend to be sturdier and are usually fine baked in one go. The lid could be made from one layer of cake or just with a covered cake board.
