What height should a sponge be?

I am making a 10″ square christening cake ……first time I have used the tin other than for Paul’s choc cake for carving. I have scaled up Mrs Jones sponge recipe…but the two sponges once levelled slightly and filled with be just shy of 3″ I think…….will that look too measly for an occasion cake?…should I stick on another layer? Just a bit worried as the trend seems to be for very deep cakes these days and don’t want to disappoint anyone….cheers L x

Hi Mrscloudy1

Once you ice and decorate it the height will increase slightly. A three inch deep decorated cake is perfectly acceptable. I usually slice a deep cake into three or two shallow cakes into two each. The extra filling in between the layers gives more height. Hope this helps.

It depends on your decorations.I think I would add the extra Layer for a christening cake.you are right the current trend is for deeper cakes.make sure you allow for the height if using fondant

Thanks you Ladies…..my gut is telling me to go for an extra layer……as there is just simple decoration on top which won’t detract from the height of the cake enough!…….will be mindful to charge appropriately next time tho…..yet another learning curve on my cake journey! X
