My friend asked me to do her wedding cake she knows I only do this as a hobby but wants her friends involved in the wedding. Anyway question. I think I’m going to do a 3-4 tier so would it be best to put fruit on the bottom or can I just used sponge. I appreciate I’ll be putting dowels in for support but just wondered what people’s experiences were

When ever I am asked to make a 3/4 tier cake, I always make the top tier fruit!

Hi ctennent

The bottom and largest tier should be the heaviest, ie if your friend’s request is the fruit cake. If you want to make the top tier a small fruit cake place it on a cake drum and stack on dowelled cakes. The cake drum will help distribute the weight of the cake better.
