What size is Mrs.Jones fruit cake

I initially thought the receipt was for 10″ but after reading the tutorial is is showing as 8″?

Hi RajD

The ingredients shown are indeed for an 8″ cake but if you want a larger cake you can scale up here

Thanks, I am trying to make a 6″ cake and scaled the contents down, but looking at the mixture of the dried fruit alone, it seems too much. I actually place this dried fruit in the 6″ (3″ deep) tin and the contents are already touching the top of the tin.

Fruit cakes which are baked for storing for up to 3 months always have a high ratio of fruit to flour. It’s the sugars in the fruit which act as preservative. Mrs Jones’ fruit cake can be stored hence the amount of fruit. Lighter fruit cakes which are not required for storing have less fruit and will keep well for a week or two. There are many recipes online just google ‘light fruit cake’.

Which is fine, but for example, Mrs.Jones = 200g raisins for 8″ cake, I therefore calculated this at 150g for 6″ cake, is this correct?

If you look at the ready reckoner it gives a factor of 0.6 which is a slight approximation to 9/16th

eg 200 = 8″
To get the ingredients for 6″ = 200 x 0.6

Do it on your calculator and you’ll get 120g
