hi. How long should I leave the ganache to set before applying sugarpaste please?

Let the ganache set quite hard but still slightly tacky just enough for the sugar paste to adhere to it. If the ganache does dry out too much moisten it slightly with a damp pastry brush.

You’re welcome, just remember let it be a little tacky. If you apply the sugar paste on ganache which is really dry, it won’t stick down properly and make big air bubbles.
