Ganache plastering

hi. paul

l would like to know how many min;s or hours wili l kept the cake in the fridge after using ganache to plas trering the cake and at what temp. or is there any other way, will the cake not produce essence of water when out of fridge . pls l need more explaination .although l havent start banking but looking forward to be creative like you. which l know your tutorial class will be of help to me.

I’ve had ganached cakes in the fridge overnight before I’ve sugar pasted them. I take them out about 20 mins before I need to work on them and brush with hot water and off we go
