Hi chowme01

You can make ganache with full fat milk or anything else however it won’ be as rich and it will have a shorter shelf life. You may need to use a little more chocolate. Best way to know is to make a little amount, cover it up and see how it behaves over serveral days.
Ganache made with heavy cream has less water content which enables a better shelf life. Adding alcohol to ganache will also lessen mould growth.

I use almond milk as my grand daughters are dairy intolerant. It’s slightly softer than using cream but I just add more choc and it’s grand. I’ve used Elmlea as well without any problems
