There is no need to freeze decorated rich fruit cake. As long as it is wrapped in parchment paper and foil then placed in an airtight tin and stored in a cool place it will be fine for a couple of years if not more!

I’ve read on other forums the trick is to keep moisture from reaching the icing. Place the cake in a box and seal it all the way round. Wrap the box in heavy duty plastic and place it in another box. Seal this box all the way round do as before with heavy duty plastic before freezing.
Defrost the cake in the boxes to prevent too much condensation when coming into contact with room temperature.
Do not touch the icing when the cake is unboxed, leave to air dry gently.
