lumpy ganache

Hi can anyone tell me why my ganache sets with lumps in it? The cream is hot enough and it melts the choc completely.

Hello breene

From my own experience it’s always usually because some of the chocolate hasn’t melted even though it looks as though it has, it happens to me quite frequently. If you look at some of the tutorials, Paul gets a few lumps in his ganache from time to time. Pop the ganache back in the microwave and warm it on medium for about 5 – 10 seconds at a time. Your ganache is already made, warming it for longer than a few seconds at a time may burn it. Stir the ganache each time you warm and the lumps will soon melt away.
