where to learn
I am at present doing a patisserie course, but I am not learning what I needed to learn, Did Paul self teach himself to carve the novelty cakes or is there another course that teaches you this? This is my passion I would like to open my own business but not confident with my skill level. love some feed back thanks.

Paul shows us how to carve cakes in quite a few of the tutorials. Have a look in particular at the techniques he employes when carving any of the vehicle cakes. You could also learn one to one with Paul at his school in Scotland. Information for personal tuition can be found here
