Cream cheese (Philadelphia) in chocolate cake batter – storage

Hi all,
I made chocolate cake yesterday that has cream cheese in the batter and refrigerated it. Am carving and ganaching today, fondant icing tomorrow and the day after for Wednesday. It’s a multi-tier superhero cake so will need a couple of days worth of decorating.

The recipe says that the cake can be made in advance and stored in the fridge but my issue is once I start with the fondant, I don’t want to put it back in the fridge (bad, bad experience with fondant in the fridge :S ) so can I leave it out if the aircon is on? Our air conditioning is automatic so it starts and stops but the flat generally remains cool.

I’m based in Saudi Arabia and actually the weather is divine at the moment, so we don’t really need it on but I think I will need to freeze the family for the sake of the cake :S

Does it need refrigerating ??

Hi Rahaf

Your chocolate cake should be fine for a few days. I bake a cream cheese madeira which stays fine for about four days at room temperature here in the UK. My kitchen is very cold so I guess that would be the same as your aircon! Most of the water in the cream cheese cooks off in the baking process which reduces some of the spoilage risks. The chocolate and sugar will also help keep it stable. Don’t freeze yourself to death but please do keep the cake cool in the fridge up until you need it for decorating.
