Mrs Jones Banana Cake – freezing?

I should think the cake can be frozen, however it would be best to get the information directly from Mrs Jones since it is her recipe.

Mrs Jones recommends to increase the flour by 25% in some of her cakes if they are intended for stacking.
When you contact her this would also be a point of discussion with her. I would also ask her by how much the leavening should be increased. As it stands the recipe calls for 1 teaspoon of baking powder and 2 teaspoons of baking soda. Sometimes increasing leavening isn’t quite straightforward particularly if you’re scaling up by quite a lot. Better to get all the correct information in one go since you will be baking the cake for such an important occasion.
