Timings
Hi everyone – after your help again!
Ive got an anniversary cake that’s being picked up next Wednesday (25th) evening. The problem I have is im at work Monday and Tuesday. So im wondering if its to early if I make the cakes as stated below – its a three tier cake (10 – 7 and 4 inch) 2 are madeira with vanilla and the 3rd is madera with strawberry flavouring. Its being decorated in lilies and roses which I have all made and ready – so my timings below – please advise!
Friday 20th – Bake cakes
Saturday 21st – Fill with buttercream and crumb coat
Sunday 22nd – Cover with Sugar paste
They will then be kept in a cardboard box in cool utility room until
Wednesday – Put together and decorate with gumpaste flowers ready for collection Wednesday evening.
Does this sound ok?

Hello Tania
Your time line is fine. Madeira cake has very good keeping qualities. From baking to eating you have approximately two weeks. The buttercream will be fine, it has a good shelf life. All in all you have plenty of time.

Thank you! Do you think it would be ok to make one of the cakes today and fill and sugarpaste tomorrow and make the other 2 tomorrow and fill and sugarpaste Saturday. I would then stack and put flowers on on Wednesday. Or is the original timeline better? X

That would be alright. Once the cake has cooled right down wrap it in several layers of cling film and pop it in an airtight cake tin or a cake box.
I mean’t to say in my last answer your timeline is fine as long as you don’t have any fresh fruit in the fillings.
