Chevron silver leaf wedding cake

Hi paul, Loved that tutorial – beautiful flowers. If we have to use a posy pick for every flower that goes into the cake, which I’m guessing must be over 20, won’t that part of the cake which ends up with all these posy picks be ruined as it can’t really be cut and served? Also, if the cake you were decorating was real cake for a real wedding why didn’t you use the posy picks?

Remarkable there is usually little damage internally from the posy picks. Because the picks are not hollow there is no displacement of cake into a tube. The pick makes a clean tunnel which doesn’t break when the cake is sliced. If you don’t want to insert posy picks into cake, alternatively you can use dummy tiers just for the presentation and have cutting cakes in the kitchens. The ceremonial cutting can be made on the bottom tier which would be real cake. No one would know any different because the cutting cakes would be iced in the same colours as the dummies, minus the flowers. Paul did this with the tutorial cake because it was travelling a long distance from Scotland to the wedding venue in Manchester. He didn’t want to take any chances in case of damage, hence you see him inserting the flowers directly into dummy cakes and not the real ones. The real cakes would have travelled as single cutting cakes but would have been nicely iced and possibly have had some of the lace decoration. The cakes seen in the tutorial were for the wedding of the person seen in this consultation tutorial and her hubby Andy Greasley who used to be employed at the site:
