Wedding cake query
Hi ,I’ve just had my first order for a wedding cake, I’ve been using mrs jones sponge cake mix for birthday cakes I’ve made in the past, and in my opinion it’s the lightest and best recipe I’ve tried, and I’ve tried many from baking books and from online, they are all different , so I’m very pleased with mrs jones recipe,however I would like to make it in smaller tins, have you the quantities for 8″ and 6″ ? Also I’ve read in blogs that this sponge is not to be used for wedding cakes, and Madeira is better? It this true?

I used this recipie for my sons wedding cake for the bottom tier which was a 12inch round and filled with buttercream and jam and then coated with white chocolate ganache, under the fondant.
The cake was amazing and find it will last for a good week.
To make in smaller tins use the conversion chat.

I do wish that the site would put a link at the top of the page too find it easier as I am sure MIWL would also find this helpful.

You can also use the cakeometre tool if you prefer not to do the maths.
Mrs Jones recommends that just flour in her sponge recipe should be increase by a further 20% to make it sturdier if using as a wedding tier. I am sure Mrs Jones will be delighted to give you more information on her vanilla cake recipe if you contact her. Her contact details can be found here:

Madeira cake will give you a better shelf life of approximately two weeks from baking to eating. This is particularly good if you have lots of complicated decorations to take into consideration. Other than that, if your timeline is shorter Mrs Jones’ sponge still has a good eat time.
