Freezing cake.
I’m thinking of making a batch of cakes and ganaching and then freezing. I understand Paul Moist Chocolate Cake freezes well, but would like a suggestion for a vanilla sponge/ Madeira that freezes well.

Just seen similar questions with the recommendation of Mrs Jones Vanilla sponge! How long can I freeze this and Paul Chocolate cake for?

Paul’s recipe will freeze for a couple or three months no problem. The victoria sponge for about a month. Because it is a sponge the texture may change a little, it won’t be quite as fluffy and springy as from fresh but it will still taste as lovely. Madeira cake is good and dense so it will freeze well for a couple of months. I’ve frozen it for three months, it’s been fine. Take a peek here for a little more info:
