Can I freeze a cake made with panache before I put the fondant on it

Ganached cakes can be frozen. It is advisable to defrost the cake before enrobing with fondant.
If you enrobe a frozen cake the moisture from defrosting. will make the fondant melt and become gooey. When defrosting, wrap the cake in clingfilm/saran wrap and defrost either in the refrigerator or kitchen worktop depending on your climate. Once defrosted enrobe the cake in the normal way.
