Ganache problem making the show box cake
I have been following the tutorial for the shoe box cake. I have made a lovely shoe and a very nice chocolate cake which i have covered in chocolate ganache.
I placed the chocolate ganache covered cake into the fridge over night and started to cover it with fondant (satin ice) this morning. the moisture came straight through the fondant and made it very tacky and so i could not run the smoother over the fondant. Can you tell me what i have done wrong. Thank you for any help you can give me.

Hi thank you to you all for the advise. I just thought i would let you know that the cake dried out fine and i am happy with result.

So sorry to hear you’re having problems with dew on your cake.
When you brought the cake out of the fridge the difference between the cold temperature of the cake and the warmth of the room temperature caused condensation or dew on the surface of the ganache. Normally if the ganache is left to come to room temperature for about half an hour all the dew disperses to leave a dry surface. Nothing is spoiled, all you need to do is leave the cake to dry, don’t touch the surface or try drying it with paper because this will leave marks.
If you’ve got a fan run it beside the cake or leave a window open so circulating air can dry off the surface sweat. Once the cake is dry it can be smoothed in the normal way.

I had a problem recently with all the hot weather and a cake I had made filling with buttercream mixed with ganache. There was some sweating but if you place in the cake box and scatter some silicone gel sachets (cheap on Amazon) around the cake they will absorb the moisture helping to keep your cake dry. MIWL is absolutely right – whatever you do don’t be tempted to touch the cake. Just be patient. I’ve learnt this tip to my cost!

To login go to the top right hand corner of the page and click where it says login or click on the user icon which will take you to your account. There you can see whether you are signed in.
