I always use Jane Hornby’s zingy lemon cake. It’s a really lovely madeira, carves well and keeps well too.

The lemon can be subsituted with any other juice you prefer but I do like a more traditional flavour for madeira. The easy vanily cake is also extremely popular but not quite as firm:
