ganache to rich

hi all,
ive only used ganache 4 times and the feed back i get is that its really nice but very rich or to chocolaty
i use callebaut chocolate white and jam for the filling and dark round the outside with a butter cake or just a normal white sponge, the tutorials i watch paul puts his ganache on really thick and if theres a gap its”dont worry thats the beauty of ganache ” surely his cakes must be on the rich side with the chocolate cake, choc filling and all that choc on the outside ?
am i doing something wrong or has anyone else have this feedback . thanks x

Hi AngieS

No, you haven’t done anything wrong! Not everyone likes ganache as a filling because they just find it too rich. In cases like this why not just make a white chocolate vanilla buttercream or any other flavour you fancy. It will still be chocolatey but not as heavy as ganache. White chocolate is very sweet so try and pair it with a sharp tasting companion filling like lemon curd or a sharp raspberry jam to cut through the sweetness.

The cake can still be crumbcoated with the dark ganache to give it stability.
