I have a lot of ganache left over from a cake making stint this week. I’d like to use it for chocolates when I do the chocolate box cake late in October. Am I best to freeze it and then use on the day before presentation. I usually throw surplus ganache away but it seems such a waste.

Yes you can freeze the ganache in freezer bags and then place into an airtight container. Keep it very well away from any strong smelling foods because chocolate grabs strong flavours very quickly. When you need to use it again, bring to room temperature overnight still in it’s wrapping. Soften in in the microwave on low heat at 10 – 20 second increments until it is of working consistency. Defrosted ganache can not be refrozen so best held in small bags and used as required.

Adding glucose and alcohol to the ganache truffles will help them keep better.

for left over ganache, if I am not keeping it in freezer but the less cool compartment, for around how long is the shell life?

Ganache can be stored in the cool compartment of the refrigerator for approximately 2 weeks in an airtight container. Chocolate takes on strong smells very quickly and should be stored well away from other foods.
