Modelling chocolate recipes all tend to be a much of a muchness. It depends what you intend doing with the paste. Some candy melts taste pretty dreadful because they are full of waxes and other ingredients. They wouldn’t be very nice to eat I found the Merckens brand to taste better than some others. I haven’t tried the PME brand yet as I tend to use either couverture or compound chocolate to make my modelling paste.
