Mrs Jones vanilla sponge/cupcakes

Could anyone tell me about the difference in recipes for Mrs Jones cupcakes and her vanilla sponge. I’ve made the vanilla cupcakes a few times and they are really delicious. I’m preparing to make my daughter’s 5th birthday cake using Mrs Jones’ recipe for a vanilla sponge . I’ve noticed the cupcake recipe is made with self-raising flour, cornflour, baking powder and drop of milk. The vanilla sponge uses just self raising flour. Has anyone made this cake and will it taste as good as the cupcakes, they also had a lovely light texture. Thanks! Trish x

Hi Trish

The cupcake recipe uses baking powder and cornflour to produce a very ligh fluffy texture as would be suited for cupcakes. The vanilla cake recipe is ideal for celebration cakes like birthdays. If it is to be used as part of a tier Mrs Jones recommends to add an extra 10% flour. Look here for loads of discussions about Mrs Jones’ recipe:
