Rice Krispie treats made in advance
I want to make a rice krispie treat model to put on a cake, but need to make it in advance of about two weeks. Will it still be ok to eat and what should i cover it with before covering with sugar paste? Don’t want to use buttercream , as it wont stay fresh.

To smooth the lumps and bumps you can either cover the model first in marzipan (which tastes yum!) or a thin coat of sugarpaste as a base layer. Either way let the first coat dry before covering again. I’ve coated with ganache as well, that works very well too but imho you’ll get a smoother finish with marzipan and a more stable model.
Thanks for your help. I am wanting to know if the treats are alright to eat after two weeks? will they be safe? I would imagine they don’t go off easily but just wanted to be sure.
I’ve eaten them after two weeks and they’ve been fine. The sugar in the marshmallow helps to keep it fresh, as does the marzipan and sugarpaste. If you’ve made models from rkt before you’ll already know to really pack the grains down very compact. This prevents the grains separating from each other causing cracks once the model is made. Hope this helps.
