What do you suggest refrigeration of ganache?

Hi, when making white chocolate ganache, do you have to leave it in the fridge overnight? Also, when you put your ganache covered cake in the fridge to set does the cake dry out?

Hello Nats

If the weather is warming up where you are, it’s best to keep the ganache in the fridge. Keep it away from any strong smelling foods because it will take on their smells and tastes.
Once you’ve made the ganache and it’s lovely and smooth, cover it with clingfilm so it touches the surface, expell any trapped air. This helps prevents a crust forming over the top of the ganache. Wrap the bowl in another piece of cling and refrigerate. Overnight in the fridge, it wil set quite hard. Bring it back to spreadable consistency by warming it very gently in the microwave on a low heat for 2 or 3 seconds at a time. It will take time. Stir after each time you heat to prevent it burning. Do this until it softens.
A ganached covered cake is sealed and will not dry out in the fridge. To protect it further, cover it in cling film and place it in a cardboard cake box before placing in the fridge.
