Paul’s chocolate cake – by hand or machine?
Hi all. Apologies if this question has been asked already but I’ve been searching for the answer and cannot find it.
I know that in the video, Paul recommends beating the cake batter together by hand rather than using a machine in order to minimise the air getting beaten into the mix and thus making a more dense cake. However I have a damaged nerve which makes it painful to do much beating of anything so I always use my Kenwood mixer. Has anyone tried making this using a machine and how did it turn out?

I too have the same problem and I do use my Kenwood to fold the batter with the K beater for a couple of minutes on the slow to medium speed. All it needs is for all the ingredients to be fully blended just as you would for a muffin mix. You’ll only get a dense, heavy cake if you beat the batter on high speed for a long time. Hope this helps.
