Hi Paul,
I need to prepare a choc biscuit cake one week in advance, it will also be covered in sugarpaste, will sugarpaste preserve the cake? How should I store the cake that it will last?It will sweat if I store it in the fridge.

A week in advance is fine and doesn’t have to be refrigerated once the sugarpaste is on. Store it in a cardboard cake box, away from any strong smells and from any heat sources like radiators or sunny windows.
