Hi,
Swiss Meringue Buttercream
I have 150 cupcakes to make, half with chocolate ganache and half with Swiss Meringue Buttercream – can anyone tell me the quantity of egg whites, sugar and butter I would need to make enough of the Swiss Meringue Buttercream to cover 75 cupcakes. I have the quantity of ganache from Paul’s Woodland cupcake tutorial.

How much buttercream you make depends on how generous you are with the topping. . Most meringue recipes give amounts for either 12 or 24 cupcakes. Best thing to do is select an online recipe you like and increase it to suit the amount required. It would be best to make in batches rather than increase the recipe in one big go. If you have any BC left over, it can be frozen for up to 3 months. Once brought back to room temperature, re beat it back to working consistency. Hope this helps.
