Light fluffy red velvet cake
Hi,
I’ve been asked to make a red velvet cake (which I haven’t done before) but they have requested that it be light and fluffy like a vanilla sponge. Are there different recipes or methods that can affect this?

Guest tutor Mrs Jones’ has her red velvet recipe in the baking section of this site. I haven’t tried it but members who have give good feedback. Several member discussions on RVC which may be of interest can be found here: https://www.cakeflix.com/questions?s=red+velvet+recipe
There are many other recipes besides the ones which have been discussed in the threads. They are all mostly the same with a few adjustments. I believe the sponge itself is light and fluffy, it’s just most people find it difficult to get the colour right. It may be a case of experimenting with different recipes to find the one you like best.
