Can I re freeze cake

Hi
I froze my chocolate, but after carving the shape, I’ve loads of cake left over, I don’t want to waste it, but don’t have time to make cake pops just yet, can I re freeze it successfully?

Unfortunately ganache which has previously been frozen and left out can not be refrozen again. This rule applies to all foods. I have refrozen only if the ganache contained ice crystals but since then I tend to freeze individual portions and use the amounts required. What you have left over from craving the cake will be fine for approximately a week if it is kept refrigerated in an airtight container. Sorry I can’t give you better news.

I only froze the sponge, not the ganache, so would the answer be the same?

The same rules really apply for all defrosted food. I wouldn’t risk it especially if this was going to be used for a customer. It will keep for a week or so and if you brush it with some simple syrup with added alcohol, it should keep for a few days more as long as it is stored as mentioned in my last post.

Thank you, I’ll try and use the cake up over the next couple of days, it’s just for family, but once I’ve made the pops, and covered in choc, then they do keep longer xx
