Hi Alicain

The following is a very useful guide to read before starting a cake with fresh flowers:
https://www.wikihow.com/Add-Fresh-Flowers-to-a-Cake

Once the bride has selected her flowers from an organic edible flower grower, you’ll be able to extract ideas from the supplier on how to attach them to the cake without causing damage to the icing. Fresh flowers are usually inserted into a small tube filled with water to keep them fresh. There are other methods which a florist would be able to explain more accurately. If you want to avoid puting them into the cake, you could use a shallow dummy tier under the cake for the flowers. There is lots of useful information online if you google ‘how to use fresh flowers on cake’. I think it would give you a better idea on the do’s and don’ts on using fresh flowers safely. I’ll try and find some more information and post back.

That would be easier. Paul has a tutorial with sugar flowers for this effect but you could employ it just as well for fresh flowers. Take a peek at these lessons:

Paul has used cake boards stuck together to create the height, equally you could use a shallow dummy.

Another way would be, to just sit the cake on a 16″ cake board and fill the gap between the cake and board with flowers. If you can make a rough drawing it will help to show your customer how you enviage her request. She may decide to add her own ideas to it. Please let me know if this helps or if there is any thing else. x
