White ganached cake

I am making a two tiered celebration cake for a church event and I plan to cover it in white ganache only. Do I have to store the cake in the fridge if I make it two days in advance or can it be left in a cool place. Also, can anyone suggest the best way of finishing the base board rather than leave it bare. Sugar paste or maybe even ganache,

Hi Josie

Ganached cake doesn’t have to be refrigerated. Keep it in it’s box and store in a cool room well away from heat sources. That includes sunshine! If you’d like to ganache the board, do it in advance so it has time to set hard.
I usually make a texturised finish on the board which gives it a little more interest. 🙂

As above, white ganched cake does not have to go into the fridge. I always leave mine in a cool place, especially if I am going to ice it. As far as the board is concerned, lots of ideas out there, but I tend to stick to sugar paste, simply because you can do it well ahead of time. I have recently seen a board covered in ruffles of wafer paper – looked really cool.
