Please can you advise on how long I should bake a 10″ square cake in a fan oven, using Paul’s chocolate cake recipe. Would you recommend that I split the mix and bake in two halves?

This should take 2hrs at 130c fan oven. However, as all ovens bake differently, keep an eye and nose on the cake. Don’t open the oven door at all for the full 2 hrs then check it for doneness with a wooden skewer. If it’s done take it out of the oven and leave it to cool completely before unmoulding. If the skewer comes out with wet batter, carry on baking checking every 5 mins until done.
