How do I obtain a blue coloured cake mix?
0
Hi davidaw
A true blue can be difficult to obtain. The eggs and butter make the batter yellow, which when mixed with blue results in green. Try using the lightest colour butter like Lurpac to minimise the yellow and mix a good strong gel colour into the batter. Rainbow Dust Progel is highly concentrated and gives good results. PME, Sugarflair and Squire’s Kitchen also have good gel colour products. You may find adding a little white food colouring to the batter first will lighten the yellow tinge and help produce a better blue. Alternatively, use a white cake recipe which uses the egg whites only.
Hope the suggestions help.
