Recipe query

Hi,
I normally use a madeira cake mix for deep cakes but can I use victoria sponge mix? If so, what recipe can I use for a 14″ square tin please?

Hi Maggie

Take a look in the baking section for Mrs Jones’ deep vanilla cake recipe. Mrs Jones recommends adding an extra 10% flour to her recipe if you intend icing it. She also has her madeira recipe which is slightly less traditional with a more moist texture.

I definitely would not recommend baking one deep 14” cake. That amount of batter would take a long time to bake. As it is a square cake, the corners will be very vulnerable to burning with an additional risk of the cake being dry.

I suggest baking the cake in two shallower parts. Each part to bake for approximately 50 – 60 minutes, checking two thirds in of the time of baking. I’ve never done a 14” cake therefore, unable to give a definitive answer on timing. Keep to the give temperature of the recipe and keep an eye and nose on the baking. Hope this helps.?
