1. Building the stand and making it food safe
Before we begin Paul must build his stand to create the internal structure which holds the cake in place. Once you have your stand built it is important that you make it food safe to prevent cross contamination between the stand and the cake, for this cake Paul uses chocolate ganache.

10. Making the elf’s arms & head
To finish the elf, Paul adds the head then makes the little hat and shows you how to make the perfect little elf ears!
11. Finishing touches
To bring it all together, Paul steams the cake then adds various snowflakes to hid the bits you don’t want to see!
