Ganache cake

Please could you tell me if I can fondant a cake after ganaching it, or do I have to wait a while xx

Hi Carole

After ganaching, pop the cake in the fridge for an hour or so until the chocolate sets. It should be just tacky before icing. If the chocolate has set too hard, either squish it slightly with cooled boiled water from a misting bottle or use a wide brush moistened with cooled boiled water to make a tack. Don’t over wet the surface, it should just be sticky enough for the icing to adhere. Ensure there are no dry spots as these can cause problems with air bubbles.
