1. Internal structure

To make the internal structure, Paul drills a hole into both cake drums then attaches the threaded rod using nuts. Paul then covers the threaded rod with tinfoil and a layer of ganache to make it food safe.

2. Stacking, carving & ganaching

In this lesson, Paul shows you how to align your cakes so that the dragons are slightly offset which gives the dragons a realistic look as if they are balancing on each other.  Once the cakes have been stacked, Paul carves them into the desired body shape then covers them in a layer of dark chocolate ganache.
